Chocolate Truffles 3 Ways


3 bags of semi-sweet chocolate chips
3/4 cup heavy cream
1 orange
1/2 tsp. ground red pepper
1/2 cup chocolate powder


to make the regular chocolate truffles, melt the first bag of chocolate with 1/4 cup heavy cream over a double boiler. When the chocolate is just completely melted then you can transfer the chocolate to a bowl and cover with plastic wrap. Chill in the fridge for at least 2 hours. To make the other flavors just start out the same way but add the red pepper or the zest of the whole orange. Then once they are chilled, just use a tsp. measure to scoop out the chocolate, then roll them in your hand to create balls. They don’t have to be perfect because you have to remember they are modeled after something pretty ugly-looking. Roll the regular chocolate flavored truffles in chocolate powder, and top the orange with some reserved zest of the orange. These are very tasty and everyone enjoys these small bites as a dessert.
