Dinner Tonight!

This meal was pretty much pulled out of absolutely nowhere! I used frozen chicken breasts that I quickly defrosted in the microwave. (usually this is something I completely avoid) Then I got a pan screamin hot and seared each chicken breast with a little olive oil, salt, pepper, garlic powder and oregano. Transfer those browned gorgeous chicken breasts into the oven (350) for a good 15 to 20 minutes along with your asparagus tossed in olive oil, salt and pepper.

For this simple sauce all you have to do is sauté some onion in a bit of butter. Then add some flour until the butter and onion are nice and thick, but not clumpy. I then add milk (or cream) along with a bit of ricotta and parmesan cheese. I use canned artichokes and frozen spinach in this sauce, but you can definitely use fresh spinach and fresh artichokes!
