Watermelon Mint Sorbet!


  • 4 pounds watermelon, cubed and removed from the rind.
  • 1/3 cup granulated sugar
  • 1/3 cup water
  • 2 tbsp. fresh chopped mint leaves
  • For texture you can add an additional pound of cubed watermelon, but this is optional!
     To start this simple and refreshing summer recipe just start by cubing the watermelon and putting it into the food processor. Next you need to make the simple syrup, which is just equal parts of sugar and water. To dissolve the sugar into the water, just heat on medium high until you cant see the sugar anymore! Then pour right on top of the watermelon. Pulse the mixture together and then strain into a big bowl. Whatever is left in the strainer once all of the liquid is through can be put back into the food processor and pulsed again along with the mint. Then just add the mixture with the mint into the bowl! give it a stir, add the cubed watermelon if you want, then freeze in an ice cream machine! You can also just put it into the freezer overnight.
