Chocolate Chili! KFRX Healthy Food Friday

Chocolate in chili! DUHH. chocolate just does magic in chili and makes you want to cuddle up with a big bowl!  So make this recipe for your tailgate or football party so your friends can feel all warm and fuzzy. They’ll know you love them. (:

Chocolate Chili Podcast

  • 1 tbsp. olive oil
  • 1 lb. ground turkey
  • 1 yellow onion
  • 1 tsp. chopped Garlic
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 1 Chipotle pepper plus 1 tsp. adobo sauce
  • 4 Roma tomatoes
  • 2/3 cup crushed tomatoes
  • 2 cups tomato sauce
  • 15 oz. black beans
  • 1 tbsp. + 1 tsp. cocoa powder
  • 1 tsp. chili powder
  • 1/4 tsp. ground cinnamon
  • 2 tsp. ground cumin
  • 32 oz. chicken stock
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Sour Cream

Start by browning the turkey and then draining off the little bit of fat that it gives off. Then set the turkey aside while your sautéing the onion, garlic, and bell peppers in olive oil until they’re nice and tender. Next, chop up the chipotle pepper and add the adobo sauce. Now it’s time for the tomatoes! The red for the HUSKERS of course. Dice up the roma tomatoes and add them to the pot. You can then add the rest of the tomato products as well as the black beans.

It’s chocolate time! Add the chocolate powder as well as the rest of the spices. Toss the turkey back into the mix and top everything off with the chicken stock, salt, and pepper. Bring to a boil, (BTB) and then reduce to a simmer (RTS) for at least 30 minutes. This is a recipe you can totally make ahead of time. Chili tastes even better the next day! If your feeling really festive, use that sour cream and make a nice husker N on the top of everyone’s chili. Just put it into a squirt bottle and go husker chili crazy.
