Pizza Rolls Podcast

  • 2 cups warm water (between 105-115 degrees)
  • 1 tbsp. Sugar
  • 2 packages quick rise yeast
  • 1 tbsp. chopped rosemary
  • 1 tsp. salt
  • 5 1/4 cups Whole Wheat or AP flour
  • Drizzle of Olive Oil
  • Your favorite homemade tomato sauce. (or jarred/canned i guess)
  • Parmesan Cheese
  • Mozzarella cheese
  1. I’ve experimented with many different pizza dough recipes and I finally perfected it just the way I like it. This dough can be rolled extremely thin and become crispy but still nice and tender toward the middle.
  2. To start, dissolve the sugar in the hot water and add it to a bowl. Then pour the 2 packages of yeast on top and gently stir. Let it sit for 5 to 10 minutes. Once the top of the water is covered with bubbles from the yeast you know it’s ready for the flour.
  3. Add 2 1/2 cups of flour and gently mix. It’s going to be really loose still, but now is the perfect time to add the salt and the rosemary. Incorporate those two ingredients into the dough and then add the remaining flour in two more installments. As soon as the dough forms, flip it out onto a floured surface and knead for 5 minutes.
  4. Now lightly coat the outside of the dough with olive oil and put it back into the bowl. Cover with a dish cloth and allow to rise for 45 minutes.
  5. After the time is up, flip the dough out and cut into 4 even balls. roll them up into nice rounds and then allow them to rise for another 20 minutes.
  6. Pre-heat the oven to 500 degrees.
  7. Now it’s time to roll! I use a rolling pin and roll it out as thin as I can get it! make sure to do this on a generously floured surface. Also make sure to shape it into a square, so you can easily cut strips out of the pizza once it’s finished. Spray the top of a broiler pan (you know the pan you don’t know what to do with it) with non-stick spray, or use a pizza stone, and transfer the dough onto it.
  8. Once the dough is nicely on the cooking vessel, top it with a thin layer of your favorite tomato sauce and lightly sprinkle with parmesan and mozzarella cheese. I personally use just plain tomato sauce that I cooked with a bit of garlic, basil and oregano. If you want you can top your pizza with any other toppings.
  9. The sky is the limit for what you want to put on your pizza! Maybe make a white pizza with a béchamel sauce and some spinach. The picture above is a pizza with Alfredo sauce and parmesan cheese.
  10. Bake your pizza for 5-7 minutes or until it’s crispy golden brown around the edges and beautiful and melty in the middle. YUM. Let it cool for about 5 minutes and then using a pizza cutter or knife, slice it into 1 inch strips. Then all you have to do is literally roll up the strips and toothpick it!
  11. Great appetizers, let me tell you. Your guests will be begging for more!
